WE do focus our waterfowl outfitting efforts on waterfowl such as Snow Geese, Canada Geese and dabbler ducks such as Mallards and Pintail, but if asked we will target other game birds such as the Sand-Hill crane or the Ruffed Grouse. Our pass shoot set-up for the big grey cranes worked out great on this morning. Some say the only way to cook crane is to boil it for 2 days with a large rick then throw away the crane and eat the rock. Others classify it as the sirloin steak of the sky. Personally I think they taste great and are very edible, but would stop short of comparing them to a good steak. Maybe we just need a bit more practice preparing them for the table.
